    Ice Cream Cake

    I've decided this year for ~Tasty's~ birthday to make an ice cream cake or it it an ice box cake...? (What is the difference?) I think I mean the first one because I want a cake with a layer/layers of ice cream. Anyway, here's the criteria:

    -made from scratch
    -NO chocolate
    -kid friendly

    Absolutely no Cool Whip, boxed cake mixes, bottled sauces/frosting, etc. Any other useful info would be appreciated as I have never made an ice cream cake before.

    Here is my suggestion for you:

    I have made a Rainbow layered ice cream cake that I saw in a magazine years ago, by baking a 9 inch angel cake sliced croswise to make four layers. Place one layer in the bottom of a cake plate, spread evenly on top with orange sherbet (softened at room temperature).

    Place another cake layer and spread softened raspberry sherbet on top. Then, another cake layer and spread softened lime sherbet on top. Frost sides and top with your favorite vanilla whipping cream frosting. Place in the freezer for 1 hour, or until firm.

    Decorate with raspberries,orange and lime slices, or with ice cream cones upside down, M&M's, or any candies that kids love.

    and here is another idea for an easy kids' party cake:

    Preheat oven to 300 degrees. Melt 1 stick butter or margarine and stir into 3 cups Rice Krispies (or other cereal kids like) to coat well.

    Pour butter and cereal mixture onto baking sheet, spread out as much as possible. Bake in oven until toasted brown (lightly toasted about 10 minutes).

    Let cool. Place half of cereal mixture in bottom of 13x9x1-inch baking dish forming a crust. Slice 1/2 gallon vanilla ice cream (or your choice) into thirds and place each slice on top of cereal mixture to cover like a layered cake.

    Place remaining half of cereal mixture over top of ice cream. Freeze until ready to serve and decorate with M&M's or candy sprinkles on top. Cut in squares and you can serve it with sliced apples and strawberries for a healthier treat.

    This is a very good tip for ice cream cakes:
    To give ice cream or sorbet the right consistency for spreading, soften it at room temperature for about 30 minutes, or microwave it on high in 10-second increments, testing for softness in between.
    Don't overdo it: You want it spreadable, not soupy!.icon_wink.gif

    i used a miracle whip/ mayo cake and, after cooling, cut into desired shape (round/square/rectangular) or half it, then freeze till very firm.

    Get your ice cream into the desired shape, but softening it a bit, cutting into shape and freeze well.

    When ready, add the ice cream, pushing into the cake (into the middle??) and freeze tightly.

    You can add icing, or Cool Whip type product and decorate.
