    Love those pictures Sarasota - makes my mouth water, have had provider problems until this morning, so am a bit late seeing it. stuffing vegetables like that is so so simple and easy on the pocket as well!

    Thx Joyful. I love them too. Zucchini is one of my favorite veggies and stuffed they can make a wonderful healthy, yet inexpensive meal. And the stuffing can be anything; I great way to clean out your crisper.

    It is also a great way to serve your vegetarian friends.

    In the store these days are those mini bell peppers in red, orange, yellow and green. They are so much fun to stuff with cream cheese, scallions, and bread crumbs for a fun side dish.

    Sounds great! I have a thread coming up just on stuffed bell peppers! watch out for it, there is just so much that we can stuff!
