    Anybody have any good recipes for leftover ham?

    I usually don't have a lot of leftover ham, but when I do I don't do anything particularly exciting with it. I dice it up and stir it into mac & cheese, add a side salad for a quick dinner. Add it to black bean; lentil; or minestrone soup. Julienne it and add it to a chef's salad. Dice it up and add it to scrambled eggs, omelets or a breakfast strata.
    There is an Italian Easter pie made with ham, prosciutto, sausage, eggs, ricotta and mozzarella. I have made a "non Easter" version with just the cheeses, eggs and only leftover ham.....equally as good as the traditional version (but different, LOL).
    Of course you can always use it in a quiche, or make a deviled ham spread for sandwiches. icon_smile.gif

    I bake a whole ham all the time just to have leftovers ... what is NOT to make with leftovers ham.

    Fried rice
    Penne with ham, peas and a cheese sauce
    Slice with a raisin sauce
    Add to Mac and Cheese
    Add to scalloped potatoes
    Fritatta or quiche
    Omelettes
    Ham Salad Spread
    Diced in salads
    Scrambled eggs Western style with ham, peppers and onions
    I have a baked ham dip with cheese in a bread bowl, great for parties
    dice and make chicken cordon blue
    Stuff with ricotta and spinach in ravioli or wontons
    Saute with peppers and onions, add swiss and make calzones
    Top pizzas with green peppers and onions

    and, don't forget

    Bean soup, lentil soup, pea soup. The ham bone is key. And the ham is fantastic.
    But, ham can be used in cassoulet too; red beans and rice
    Lots of dishes ...

    Just a few ideas ... but I make a ham every 2-3 months, I love it.
