    Happy Good Friday!!! And a Blessed Easter to all!!!!!

    I had a wonderful time in Arizona visiting my son. He played really well against the Rangers minor team. icon_smile.gif Now it will be a big stretch of time before I see him again. icon_sad.gif

    On to Easter. How is everyone celebrating? Easter will be at my house this Sunday. My 2 brothers and their families will join us. Therefore, we'll go to Easter church service on Saturday night, so I can prepare on Sunday.

    I've challenged my 2 DS's to each contribute a dish this year. We'll see what they do. It might just be a battle of deviled eggs, but that would be fun.

    So here's my menu; share yours!!

    Saturday - probably paninis or something, as I'll be cooking and cleaning all day, and then church at night

    Sunday - I'm still working on appies and another dessert, but here is the plan: I'm making for sure Awesome Baked Ham, Carrots (Old Family Recipe), Carrot Cake, roasted applesauce, and others are bringing rolls, cheese and crackers, green salad, green vegie, potatoes, and ???

    Monday - Simple spaghetti and meatsauce, salad

    Tuesday - cream cheese chicken chili from pinterest (didn't get made last week)

    Wednesday - Baked Rigatoni with Ham and Feta with salad

    Thursday - Bunco!!! Busy Night Microwave Wet Burritos for the menfolk

    Friday - leftovers!

    C - glad you had a nice visit! Easter, my family was religious, but never really practiced. However, we were always on vacation during Easter (Mom, school teacher, so we came down to FL). But, we always had Easter dinner when we returned. Relish tray, glazed ham, spud salad, baked beans, and Grandpa's rice pudding. Me and just my son this year - low key.
    I hope everyone is warming up; we had a very COLD easter week here. I'm still recovering from 3 dental surgeries this week ... not a good week.

    SAT ...
    Out - A BBQ fundraiser for the local kids soccer organization. I'll stop over, visit a bit, and grab a quick bite to eat. It is restaurant catered, so the typical - BBQ chicken, ribs, corn, slaw, corn bread, pies and cookies. I bought a ticket, and a couple of raffles too. My son played soccer; so I try to support it.

    SUN ...
    Easter ... Sunrise service on the beach (I go every year, if nice weather); a poached egg on toast with a Bloody Mary (it's tradition, the bloody mary that is). Then, dinner w/son, very early before work - Baked Ham; Potato Salad w/a few tweaks WAY less mayo and dijon, but close; Jazzed Up Bushes Beans, baked; and, a small relish tray - pickles, olives, and peppers. Then, a good friend is stopping over after his shift - leftovers for him. Me ... another glass of wine.

    MON ...
    Ladies #1 and #2: Creamy artichoke and lemon soup, another site; ABM pumpernickel bread (got a great mix from the local Amish Market); crab salad (new recipe) on a bed of lettuce
    Me: Shrimp cakes w/peach relish (another new recipe); simple creamy slaw with cucumber

    TUES ...
    Easter Part II - No remake, just leftovers

    WED ...
    Lady #1 and #2: Church Meeting - recipe club
    Me: Lighter Baked Pasta Primavera; garlic bread; salad

    THURS ...
    Lady #3: Company still in town
    Me: Lamb burger w/artichoke spread (new recipe); chick pea salad (another new recipe)

    FRI ...
    Ladies #1 and #2: Card/Game Night - TBD, they said they will probably have lots of lamb leftover; maybe gyros, chick pea salad, creamy celery soup?
    Me: Last of the ham before it goes to the freezer, served with raisin sauce; and leftover pasta primavera

    Don't forget to clean out that pantry, fridge and freezer ... there is a meal waiting to be made!!

    Here we are in April this week! Spring has finally found us on the Canadian prairie. The white snow is now dirty and brown and water is running in the streets. We still have about 2 feet of snow to melt and hope it goes slowly so as not to flood. But.. . . so glad to have some warmth from the sun. Yeah!

    Onto this week's menu. I do have a couple of carry-overs that I didn't get made last week.

    Sunday -- Easter and finally the birthday celebration for my son. He ended up having to work all weekend last weekend. Life of a chef.
    Baked ham, I do it studded with cloves and basted with orange juice, brown sugar and dry mustard just as my mother always did. Sigh! Served with cream cheese potatoes, broccoli, Creamed Corn, Marinated Cucumbers, Onions, and Tomatoes, pickles and rolls. For dessert Chocolate Nirvana Cake.

    Monday -- Slow Cooker Split Pea Soup served with Buns and Ham.

    Tuesday -- Cheeseburger Stuffed Potatoes with a nice Romaine salad.

    Wednesday -- Oven Denver Omelet (from last week's menu) with soup from Monday.

    Thursday -- Barbecue Country Pork Ribs with rice and green beans.

    Friday -- time to clean the fridge and eat some leftovers!

    Saturday -- Teriyaki Glazed Chicken and Fried Potatoes Without the Fry with coleslaw (from last week).

    Monday: Amish Salisbury Steak w/potatoes and veggies
    Tuesday: Pizza night
    Wednesday: Shrimp and Vegetable Spaghetti
    Thursday: something from the freezer or hotdogs and chips

    Easter Fruit Salad looks good. I like the dried apricots in it!

    Beautiful photos, yummy menus.

    Charmie -- I have made the Nirvana Cake 2 or 3 times. Everyone likes it here. It really isn't difficult just several steps. As it turns out I won't be making it tomorrow. My dil called and wants to make the cake for her husband. I am fine with that and know it will be delicious. My other dil sent a message that they are bringing an appetizer. I had told her not to bring anything as she is only a few days from her due date! No one ever listens to me. icon_wink.gif It may be a long time ago but I do remember being tired those last few weeks. Getting excited to see our first grandbaby!!

    Charmie, the warm weather that you sent over finally arrived on Friday! I think it goes away again later in the week, but it's April so it can't be that bad.

    We are not really doing anything in particular for Easter. Sometimes we've had hams with in-laws, but I am just not big into ham so it's no big hardship to not do it. We are just going to have stirfry with the 2 of us.

    Sat – Spanakopita (Greek Spinach Pie) from freezer with veg and some smoked salmon which was on sale (pushed from last week because of a bonus leftovers night)

    Sun – stirfry with black bean sauce (from a jar, with augmentations), ginger, green onions, and frozen fish; over brown rice and with toasted almonds

    Mon – something basically like Turkey Tamale Casserole (I have an odd remnant of stew beef in the freezer which I will chop small and use up in this), plus add extra veg

    Tue – Lemon Roasted Chicken With Potatoes and Green Beans – not especially interesting, but almost no effort or cleanup

    Wed – some kind of made-up white bean tomato soup with greens and rosemary and garlic; with bread to dip and cheese on top

    Thu – Bird's Chicken Piccata, served over penne and steamed broccoli

    Fri – leftovers from Monday

    I really need to figure out how I'm going to get a garden going after such a long winter and with a baby on the loose! --M

    I think Lemon Roasted Chicken With Potatoes and Green Beans DOES sound interesting! Yum!
