    i know there are certain things one shouldn't use fresh pineapple for.. (enzymes and all)... Would fresh pineapple be ok in Rumtopf? Thanks.. Nora

    Yes, sounds nice actually, give it a bit of a tropical twist. Pineapple is utterly nice in white rum drinks, so it should be good in rumtopf. It certainly contains enough natural sugar, which is the main indicator.

    I have never run across a recipe for Rum Topf, that had pineapple in it, but why not. My mother used to make it and I know, that the fruit was used as it came into season. It was all stone fruit. Cherries, plums, apricots. small peaches.etc. It had to be fruit that would not turn to mush. ,because it was not eaten until the first fruit came back into season the following year. icon_biggrin.gif Always 1 pound fruit, I pound sugar and cover with Rum. It was potent and delicious concoction.
    Now I remember my grandmother making something I have never run across again. She used walnuts, that were still in their green shell, sugar and Cognac. The green shell would get very tender and it was sooooo good. She served it over cake or ice cream Yum! wave.gif icon_biggrin.gif
