    Lost Healthy Meals in Minutes recipe card

    I have the Healthy Meals in Minutes recipe cards but unfortunately I have misplaced one on our favorites. It is recipe card 65 in the Perfect Pasta group. It was a chicken manicotti and had mushrooms, green onions and I believe something like a light clear sauce. I would greatly appreciate anyone's help. Thank you! Donna

    Still looking for the chicken manicotti recipe from Healthy Meals in Minutes recipe cards. It has mushrooms and green onions and I believe the sauce was soy sauce based. Can anyone help?

    I have a theory that all the recipes cards people lose (there are a lot!) are hiding out with the missing socks, maybe behind the dryer. icon_lol.gif
    Good luck! When you get it you may want to consider putting it in the recipe database here so it can't get lost again.

    I can't attach the recipe here, so I'll try to type it out. If this doesn't work and you want a copy of the scanned recipe, let me know an email address.

    Manicotti Oriental-Style
    12 manicotti shells
    2 skinless, bonelss chicken breast halves (4 ounces each), diced
    1/2 cup bread crumbs
    1/4 cup chopped green onions
    1 egg white
    1/2 cup shredded part-skim mozzarella cheese

    for the sauce:
    1/2 cup dry white wine or reduced-sodium chicken broth
    2 teaspoons cornstarch
    1 1/4 cups reduced-sodium chicken broth
    1/4 cup chopped mushrooms
    2 tablespoons reduced-sodium soy sauce

    1. Cook pasta according to package directions, but do not add salt. Drain in a colander. Spray a 13x9" baking pan with vegetable cooking spray.
    2. Preheat oven to 350 degrees. Spray a medium nonstick skillet with vegetable cooking spray. Heat skillet over medium heat. Add chicken. Saute until chicken is cooked through, about 4 minutes. In a large bowl, combine chicken, bread crumbs, green onions, and egg white. Spoon chicken mixture into shells. Place in prepared pan.
    3. To prepare sauce, in a small bowl, combine wine and corn starch. In a medium skillet, combine broth, mushrooms, and soy sauce. Stir in wine mixture. Simmer over medium heat for 3 minutes. Spoon sauce evenly over shells. Sprinkle mozzarella over top. Bake until heated through and cheese melts, about 30 minutes.

    Julie, the forums are not searchable, so unless the recipe is put into the database it will be nearly impossible to find again down the line. If you can't or don't care to put it in, I'd be glad to, but it would end up going under my name (I'd credit you in the intro). Just let me know. Better yet, maybe one of the people searching for the recipe would be willing to do that!

    I have no problem entering it in a database. Can someone tell me where to go to do that? Also, if there are any other Meals in Minutes someone is missing, I have the full set. Thanks.

    Hover over your avatar/icon/picture and user name on the upper right side of the page. A box will open up, and the Submit a Recipe button is on the lower right side of the box. It will walk you through the process. Let us know if you have a problem with it.
