    The header note says "Each batch is enough to season 1 pound of meat." It doesn't actually make 3 tbsp - more like 2 1/2. If you're scaling the amount up to store the mix in the cupboard, use about 2 1/2 tbsp per pound of meat. Otherwise, just mix it fresh.
