Rainforest Cafe's Coconut Curry Sauce Do you use the Coco Lopez cream of coconut or coconut milk? The sad part about this question is that I used to work at a RFC lol.

The recipe calls for Coco Lopez, which is cream of coconut, not coconut milk. That's what I'd use, although the sugar content is not something I'd care for with chicken.

Coco Lopez also sells coconut milk.
I think I'd prefer the coconut milk in this.

Yes, they sell other coconut based products, but when only the term "Coco Lopez" is used (at least in every bar or restaurant I've ever worked in), it specifically refers to the original unique product, the cream of coconut. I'd prefer the unsweetened coconut as well. Perhaps it's time to contact the contributor to get her/him to make a correction, if something other than cream of coconut is meant. Perhaps they didn't understand the implication.
ETA: Every version of this recipe that I found on the net just says "Coco Lopez", nothing sepcifically about coconut milk.
