Hcg Phase 3 Cauliflower Focaccia Bread or Pizza Crust

When I cooked the cauliflower without liquids, as the recipe emphatically states in all caps, within 20 minutes the cauliflower was brown and rubbery. I have a hard time convincing myself that this is intentional. I wasted the whole head of cauliflower.

Should I try it again with liquid?

I cannot believe that the cauliflower spends 40 minutes in the microwave. Very few things do, and this is just one cup of florets. 4 minutes, maybe....

I suggest you contact the chef by clicking the arrow to the right of their name, then contact this chef - perhaps there was an error in entering the recipe.

I found essentially the same recipe here http://recipes.sparkpeople.com/recipe-detail.asp?recipe=1776591

and it just calls for a cup of cooked mashed cauliflower. So I would say - cook the cauliflower by any means you like until it is very soft, and then mash it.

My goodness, I found that recipe as written all over the interweb!

I wouldn't add much liquid at all, as it is being used to make a crust and you don't want it to turn out too wet. Forty minutes is an awful lot, but microwaves vary widely in power and you should cook it according to your microwave's power level. It doesn't call for covering the cauliflower, but I would do that for sure to conserve the moisture it already has.

I steam veggies all the time in the microwave with a tbl or so of water, which is sufficient. 40 minutes is an impossible time.

Thanks so much for your helpful suggestions. I agree...I don't think I've ever cooked anything for 40 minutes in the microwave! I think I'll try it again with a sane cooking method for the cauliflower. Thanks again, everyone!
