HI, chef. Questions like this are best posted in Recipe Requests - it's one of the choices in the Go To Forum dropdown above.

I used the recipe sifter after first searching "meatloaf" and did not find any meatloaf showing cardamon as an ingredient. I did find these that have applesauce, and perhaps one of them will be close to what , http://www.food.com/recipe-finder/all/meatloaf?inclingre=738

I found this similar recipe that includes 3/4 cup applesauce, 1/4 teaspoon ground cardamom and 1 tablespoon Dijon mustard, but you can use dry mustard instead.

Here it is for you to check it out:

Thanks so much for replying. Still no cigar but I think I'm getting closer to trying to make this thing!
I know there was no onion or garlic, but there was cinn. which I had forgotten, and the applesauce went both in and on top, I think.
The applesauce mixture is supposed to be spooned into an indentation made in the top of the meatloaf.
I hate to keep asking but does this sound familiar to anyone.. icon_question.gif icon_question.gif
I don't know why I am so obsessed with this, but this was so good I remember it from over 20 years ago.
    Thanks again.

This other similar recipe includes the applesauce inside the meatloaf and also in the top filling. What you can do is this: combine the ingredients that you like from the recipe above: Apple Spiced Meatloaf and this recipe, and follow the directions 2 and 3 in this recipe to make the depression in the middle of the loaf and pour the filling ingredients there. You can see it in the pictures, too.

    APPLESAUCE MEATLOAF RECIPE - 12 reviews -
    By Judy from Hawaii -

Judy's Note says: "I was given this recipe by my matron of honor more than 25 years ago. It is a family favorite. It is quite different from the usual meatloaf, sweet enough that the kids love it, but the Dijon mustard cut the sweetness so adults will enjoy it as well".

    MEATLOAF:
    1 lb ground beef
    1 cup soft breadcrumbs
    1 egg
    2 tablespoons finely chopped onions
    4 ounces cans applesauce
    1 teaspoon Dijon mustard
    1 dash pepper

    FILLING:
    1/2 cup applesauce
    1 tablespoon brown sugar
    1 tablespoon vinegar
    1 teaspoon Dijon mustard

    Directions:
1 Combine meatloaf ingredients and shape into a round loaf in a 8 or 9" baking pan.
2 Make a depression in the middle of the loaf.
3 Combine filling ingredients & pour into depression in loaf.
4 Bake at 350 for one hour.
5 If necessary, pour off grease before serving.
