A million years ago on YAN CAN COOK (whew...showing my age hurts) Yan said it wasn't necessary to peel ginger....so I always grate skin and all....something about the best flavor next to the peel....

I love ginger...use it often...I keep large roots in the freezer....and grate frozen as needed.

Thanks so very much for that hint - I always keep ginger too but never even thought of freezing it and as a result it's always going bad. Grating skin and all is even better - can't wait to try that out.
