    Menu for Week of March 9 through March 15, 2013

    Hello menu buddies!!!!! How is everyone? Did you stick to your menu plans? I was fairly accurate, but always something gets thrown in there! icon_smile.gif This month is gonna be a busy month, but I'm looking forward to it!!!! This weekend is the only one I have without a gob of things to do! Next weekend we're going to away to celebrate our anniversary; the following weekend we'll be going to Arizona to watch spring training and visit eldest DS. The last weekend will be Easter and I think all of my family is coming here. Good things coming!!!

    Here's my menu for this week. Share yours!!!

    Saturday - didn't get to this last weekend: Chili's Copycat Cajun Chicken Pasta with salad

    Sunday - Paninis and soup. Got some pesto gouda at Trader Joes and wanna try that!

    Monday - Chicken Lazone with mashed potatoes and green beans

    Tuesday - Ravioli Lasagna With Ricotta with salad and bread

    Wednesday - Crock pot pasta sauce over penne with salad

    Thursday - Cheese Enchilada Stack with rice and salad

    Friday - leave for our Anniversary in San Diego!

    Well, I am still trying to save $$ buy using stuff on hand. I have stocked up in the FREEZER, so I will really be using that this week. And next Sun is St Patty's Day - of course we have plans.

    - Pot of Stuffed Pepper soup; loaf of bread
    - Also, a container of egg salad
    Dinner: Tilapia w/creamy shrimp over orzo; tomato feta salad

    MON ...
    Ladies #1 and #2: Out
    Me: Tomato soup (freezer); grilled cheese w/bacon; salad

    TUES ...
    Me: Chicken and cheese ravioli (freezer) w/mushroom sauce; garlic bread (freezer); cucumber salad

    WED ...
    Ladies #1 and #2: Dinner party TBD - thinking grilled artichokes with a lemon garlic aioli; lamb chops with a mint pesto; risotto; baby carrots; and, lemon pie
    Me and g/f: Chicken (extra I grilled Sat) wrap sandwiches w/olives, sun dried tomatoes, cucumber, feta sauce, lettuce; fries or onion rings

    THURS ...
    Ladies #3: 3 cheese ravioli w/white wine, spinach, and mushroom broth; roasted stuffed tomatoes; crusty bread; flan for dessert
    Me: Pork stew (freezer); crusty bread; salad

    FRI ...
    Ladies #1 and #2: Card/Game Night - TBD, thinking breakfast
    Me: Out

    Good morning all. Slept till I woke up (doesn't happen very often). Cold and rainy outside. Good day for cooking. Spring Break is next week. Going to Sanford, FL . Son's baseball team has a tournament; we plan to step on over to Orlando for some much needed fun while we are there. This week, just the usual work and baseball games. icon_biggrin.gif

    The plan, Mon-Fri:
    Monday: Chicken -Vegetable Spaghetti, salad and bread

    Tuesday: baseball game night--Italian Sloppy Joes, chips and salad

    Wednesday: Sunday Chicken, Lemon-Oregano Potatoes, steamed green beans, salad and Fresh Raspberry Pie

    Thursday: baseball game night--Grilled Rib Eye Steaks, Grilled Mushrooms and salad

    Friday: baseball game night--eat out after, then Raspberry Apple Cider

    Work Lunches: Tex-Mex Deviled Eggs w/ salad, Soothing Chicken Soup w/ Instant-Potato Bread (Bread Machine)

    Breakfast: Flannel Cakes

    Snacks: Pinto Bean Dip w/ chips

    Hi,

    Interesting week this past week with big snow, power outage (love the gas range!!), and me feeling awful for part of it. But now we are having a beautiful weekend (60 degrees!).

    Sat – takeout night for my birthday (rescheduled for when we were feeling better)

    Sun – Vegetable Biryani; I think I will use chickpeas rather than kidney beans, and cook the vegetable part separate from the rice, for which I think I will use quinoa for more protein

    Mon – spinach/BBQ chicken flatbread using Socca as a base

    Tue – turkey sausage lasagna from freezer (making my first forays back into the world of cow dairy)

    Wed – Beef Pitas With Yogurt Sauce with green beans

    Thu – salmon melts with cooked collards

    Fri – pasta, jarred sauce, broccoli, poached chicken, parm as night-before-10-miler dinner; guests can combine to suit their desired carb/protein/fat/fiber levels -- and easy for me.
