I can tell you that when I'm off gluten my hair is full of body, healthy and shiny. If I cheat with gluten, the next morning I lose a fistful in the shower and it's flat, lifeless and stuck to my head like it was my whole life until I found the intolerance. Dairy has the same effect on me
