    Hi everyone. Wanted to say that I'm aware that my tag is overdue for How to Make German Quark. I was late to request an extention but still plan on making it within the grace period.

    I've actually already attempted once but used the wrong type of milk so it wouldn't curdle. I have better milk now that I'm hoping will work but out of lemon juice. Have a 40lb box of lemons (!) coming on Saturday so maybe by Sunday I can have a review posted.

    The first time I made it I used a gallon 1% milk and got a tiny 53g ball of quark! Out of a gallon! Make sure you use whole milk icon_lol.gif

    Thanks for the warning! I actually got non-homogenized whole milk. It is pasteurized but not ultra. The first one was ultra.... that is almost all that is around these days! and all it did was turn into lemon milk. I seem to remember my nutrition prof in college not really liking the "ultra" process because it changes the chemical properties somehow. It really opened my eyes how prevalent it now is. The milk I had bought was even organic.
