    Smoked Pork Chops

    I very! overly smoked 2 1/2 " pork chops.

    They're definitely NOT like those wonderfully, pink, moist ones in the store!

    they're really super dry, and hard

    What can I do with them??????????

    Dice up and throw into cabbage or split pea or some other type of soup.

    Or in a pot of beans, instead of a ham hock. If they don't re-hydrate nicely, they are easy to fish out and throw away after they impart their flavor to the beans.
