    Does anyone know at what point in this recipe I can make this dough ahead & hold it in the refrigerator for a few hours? I'm thinking I should rest it & then put it in a ball, wrap it in plastic wrap & refrigerate it. I am new to making pizza dough. Thanks for your help. icon_biggrin.gif

    Yes, you can. It's easier to stretch after the gluten has relaxed.

    You can put it in the fridge after you form it into a ball. A long, slow, cold rise will allow for additional gluten and flavor development.
