    Lime Leaves & Lemongrass Stalkas

    I purchased lime leaves to make a Thai soup. I only needed a few along with lemongrass stalks. CAn someone tell me if I can freeze these ingredients as they weren't cheap here. Hope so..and I hope it doesn't diminish the flavors when I reuse..Thanks!

    I always freeze keffir/lime leaves. I layer them on a paper towel and place in plastic bag. I've not done this with lemongrass - I have found a paste in the produce section that is just easier to use.

    Thanks so much...I'm going to do that right now!. I've seen the tube lemongrass but somewhere I read stated it wasn't as good as fresh....I'm going to try it though, because it makes more sense in cooking.....

    I have a tube as well.

    Fresh isn't always best. Depending on how long it has been on the "shelf" it loses flavor.

    I will buy lemongrass if I am just going to throw in large chunks of it into, say, a broth to flavor it. But if a recipe calls from minced lemongrass, I head for my tube. The stuff is hard to chop, I never get it quite fine enough, I don't need the aggravation icon_lol.gif
