    can you use chicken without the skin???

    Yes, I think you could. The coating might not want to stick on the chicken as well but I think it would work just fine.

    Years ago I would take the skin off of the bone in chicken and still made regular fried chicken with it.

    I think this recipe was probably intended for skinless chicken.
