Is there such a thing as a recipe for sugar free fudge? Our new pastor's wife is diabetic. We will be heading to women's reatreat in November and I always bring fudge for the group. I don't want to leave her out of the fudge fest, if I can help it.

Reduced Sugar Chocolate Fudge

FUDGE CANDY (Sugar Free)
13 oz. can skim evaporated milk
3 tbsp. cocoa
1/4 c. butter
1 tbsp. granulated sugar, replacement
Dash salt
1 tsp. vanilla extract
2 1/2 c. unsweetened cereal crumbs
1/4 c. nuts, very finely chopped
Combine milk and cocoa in saucepan; cook and beat over low heat until cocoa is dissolved. Add butter, sugar replacement, salt and vanilla. Bring to a boil; reduce heat and cook for 2 minutes. Remove from heat; add cereal crumbs and work in with wooden spoon. Cool 15 minutes.
Divide in half; roll each half into a tube, 8 inches long. Toll each tube in finely chopped nuts. Wrap in waxed paper; chill overnight. Cut into 1/4 inch slices.
Makes 64 slices.
SUGAR FREE FUDGE
1/4 c. diet butter
2 oz. unsweetened chocolate
24 packets Equal
1 tsp. vanilla
8 oz. reduced calorie cream cheese
1/2 c. chopped pecans
Melt butter and chocolate. Stir in sweetener and vanilla. Combine chocolate mixture with cream cheese and beat until smooth. Stir in nuts and spread mixture in lightly greased 8-inch square pan. Refrigerate until firm. Cut into 1-inch squares. Yield: 64 squares.

LO-FAT CHOCOLATE CREAM CHEESE PIE
1 (4 serving sized) pkg. fat-free, sugar-free instant chocolate fudge pudding mix
1-3/4 c. fat-free milk
1 tsp. vanilla extract
1/2 of an 8 oz. pkg. reduced-fat cream cheese
1/2 of an 8 oz. container frozen light whipped cream (like Cool Whip)
1 (6 oz.) reduced-fat chocolate-flavored crumb pie shell
1 c. fresh raspberries, or blackberries
1 tbsp. grated semi-sweet chocolate

n medium bowl, prepare pudding mix as directed on pkg. using the 1-3/4 cups milk. Stir in vanilla extract, set aside.
Place cream cheese in large microwaveable bowl, uncovered, on high, for 15 seconds. Stir. Microwave on high for another 15 seconds. Beat cream cheese with mixer on medium for 15 seconds. Add half of the pudding mix, beat until smooth. Add remaining pudding mix, beat until smooth. Fold in half of the whip cream topping. Spread mix in pie shell. Chill for 4 hours or until set.
Top servings with remaining whipped topping, berries and grated chocolate.
Only 180 calories per slice and 8 grams total fat, but taste like heaven.
