I'm not fully transitioned into my new position yet. I'm working 40+ hours, but haven't made the move to the new salary yet, as they haven't hired my replacement so I'm not doing the new job yet. Oh well, it will come. I want to give a shout out to CrockPot!!! My slow cooker took a dive during my catering event a couple of weeks ago. I was sooo frustrated as it was only a year and a half old. I emailed CrockPot and they are mailing me one!!!! For free! It's a $90 slowcooker so I'm very happy with them! Can't wait for it to get here!! Any who, here's my menu for the week. Share yours!!! Saturday - Quick & Delicious Pork Chile Verde (didn't get made yet) with rice and tortillas Sunday - SUPER BOWL!!! Going to a friend's house, not sure what I'm bringing yet Monday - Mrs. C's Fried Rice and lumpia (from the freezer) Tuesday - Grilled Kielbasa and Penne - new recipe, with salad Wednesday - Hawaiian Meatballs and rice, and vegies - new recipe Thursday - BUNCO!!! Spaghetti for the menfolk Friday - Southern Style Crock Pot Ham (hopefully will have crock pot by now), with potatoes and vegies Congrats to your husband on his new job! The job market is tough right now so things seem to be looking good for your family!

Congrats to DH, now-a-days, any work, it is a good thing. Oh, no 1 1/2 yrs old is basically new. But good for CP sending you one, they should. My Rival is 20+, and my oval Rival 10+. I have been happy with them. I know you like the CP, so glad you are getting it replaced. Had a few changes this week, but got it done - not buying extra stuff or eating out. Goal for the next couple of weeks - try to use what I have and stay under 25 for the week. Now, obviously - laundry detergent, cat litter/food, and a few items for cocktails I'm not counting, just basic meal ingredients. C- love the Hawaiian Meatballs, sounds good; and a CP ham is always good. ---------------------------------------------------- SAT ... Made 8 mason jars of my Beer Cheese Pretzel dip (other site) for my friends who are helping me with the SB party tomorrow. Dinner: Tostada w/friend bringing me a present from her recent cruise. Leftover smoked chicken from this week, beans, cheese, lettuce, olives, salsa and sour cream; fresh fruit with a minted sugar SUN ... Superbowl Party: FL style Low Country Boil, with the basics, but also clams, mussels, lobster and shrimp. Lettuce chopped salad cups, cheesy bread, Classic Knorr Spinach Dip in a Bread Bowl, Velveeta Rotel Dip, pretty close to what I make Hummus, veggies to dip, Green Onion Dip but it needs seasoning, football sugar cookies, and I'm sure something else will show up. Plenty of beer and cocktails. MON ... Lady #1, #2, and Me: Bacon Topped Mini BBQ Turkey Meatloaf I looked all over this site any my other site, and couldn't find close to what I wanted; this looks really good); chili corn on the cob; kale, and cheese stuffed baked tomato (from my garden) TUES ... French bread pizza (Stouffers style) - w/turkey sausage, peppers, onions, mushrooms, fresh mozz; caesar salad (using up some bottled dressing) WED ... Lady #1 and #2: Cheesey Herb Pastry Wedges and French Chicken and Vegetables Me: Out THURS ... Pasta w/hot Italian sausage and a yellow tomato sauce (my own recipe); salad; garlic bread FRI ... Soup night with friends. I'll pick up some rolls, deli meat/cheese, typical toppings; and it will be make your own sub. And I have 4 different soups in the freezer (creamy veg; kale, potato and sausage; kale and squash; beef lentil) we can heat up too. I'll get the others to bring a dip or two, chips, and beer ------------------------------------------------------ And other than, some milk, romaine, penne pasta, and ground turkey; I should be set for the week. And I know most cooking discount stores carry them too. If you are just making a few, pick up a pkg of 3 mini aluminum loaf pans, they works great and disposable. We now have a home goods - I'll look there. I have some old mini loaf pans that were my mother's, but I like the idea of them all being joined together. Home Goods changes all the time; but I know I have seen them there; and walmart too.
Great for bread, mini quiche or stratas which I love for a breakfast. I make a spinach, ham, egg, and cheese strata. I loaf if like 2 servings or 1 hungry person. It also makes a great great pudding, meatloaf of course, mini terraines if you like those I also line them with plastic and make fun dishes like mini cheese loafs for Xmas presents. Also, mini monkey bread And try added Pillsbury dinner rolls, cut them up into pieces, Add some ham, bacon, peppers, onions, mushrooms, cheese and top with beaten eggs. It sets up a muffin type of quiche. Get 2-3 slices per person. Also, line with a small tortilla, It folds right in. Crisp up. Then use a mini boats for a taco salad. Mini lasagna, sauce, 1/2 noodles, cheese, meta, just like a regular. Once they are cooked, cool, refrigerate then flip out. Then, wrap each in foil and reheat. Then make perfect little slices. Easy for a made ahead party Just heat and each person gets their own pouch; it is sort of fun to serve that way. Never mind, glitch, everything was centered, the text. NOW it isnt. And yes ... I was wearing my glasses.

I love all the mini-loaf ideas. It looks like a great way to do things for the freezer since the smaller portions would thaw so easily compared to one whole recipe at once. Charmie, it is good to hear about crockpot standing behind their product -- that can be so rare these days. Here we go: Sat – leftovers from Thursday (mole tamale type thing -- anything mole-like is so warming in this brittle weather) Sun – Quinoa Beef Picadillo [freezer] with Authentic Injera (aka Ethiopian Flat Bread) – I guess you could call it fusion; it will be my first try with the njera) Mon – Wild Mushroom Stroganoff, with egg noodles or maybe njera leftovers from Sun Tue – Chicken Chasseur (with bread from freezer) Wed – salmon melts with rest of bread; frozen veg Thurs - Stuffed Red Peppers With Quinoa, Provolone and Walnuts but will sub portobellas since the nice peppers are so expensive right now and peppers are one of the items that is recommended to buy organic (I think I will also put some chickpeas in there) Fri – Mexican Tomato-Bean Soup With Corn Dumplings Looking at this now, it is very stew-oriented . . . I guess I am responding to the cold weather. Oh well --- they say the groundhog did not see his shadow, so if we can trust a rodent, we are set for an early spring! --M Morning all
Here is the plan, Mon-Fri: Monday: Skillet Hopping John, cornbread and salad Tuesday: Basketball game night--Chuck Wagon Burgers, dill pickle spears, and salad Wednesday: Mushroom, Bell Pepper, and Cheese Omelet, steamed broccoli, and salad Thursday:Smoky Cajun Jambalaya, crusty bread, salad, and Texas Pecan Pie Friday: afterschool district swim meet, pm basketball game Work Lunches: Italian Peasant Soup and Black Bean and Chipotle Soup Breakfast: Farmer's Breakfast Snacks: Beef and Cheese Wraps and Allspice Orange Nut Bread Drop off meal for friend w/ NHL: Creamy Burrito Casserole, Spicy Baked Rice w/ tortillas to wrap and Mincemeat Muffins II Love the soups for lunch. Soups are so good to have on hand.
