Hi Sandra,
I really find no reason to use an electric mixer (kitchen-aid or hand held) for
mixing pasta dough. Doing it by hand works just fine.....you want to be careful not to over mix the dough (easier to accomplish when mixing by hand).
The pasta rollers for the kitchen-aid will be very helpful - just follow the directions in the recipe for rolling the dough and you should be fine.
Three things to remember when making fresh pasta:
1 - Let the dough rest (covered) for about 15-30 minutes (not longer than 1 hour) after you finish mixing it and before you roll it.
2 - Let the cut pasta dry for at least an hour after you have cut it and before cooking it.
3 - Fresh pasta cooks very quickly (quicker than store bought boxed pasta) - usually only a few minutes in boiling water - of course that will depend on how thin/thick you roll the dough. When it floats to the top, of the pot it is cooked.
