    What can I substitute for the amartha (Spelling is wrong) flour?

    The recipe uses only 1/4 cup of amaranth flour...............so I would just omit the amaranth and make up the 1/4 cup from the other flours/starches used. I don't think that 1/4 cup flour is a large enough quantity used to make a huge difference to the taste or texture of the bread.


    I think I'd go with using 1/8 cup sorghum flour and 1/8 cup tapioca starch. Just measure them both into the 1/4 cup measure to replace the 1/4 cup amaranth flour used.

    If you have as "natural foods" store near you you will find amaranth flour there. Ours carries it in the bulk section, so you can get as little as you need. It's very nutritious.
