Can I use celery soup instead of the mushroom because my grandson does not like mushrooms. Do I need to use sour cream??

Yes, you can substitute cream of celery for mushroom but the flavor will be different.

If you do not use sour cream you will have to use something in it's place (for the liquid content. I'm not sure what the best substitute would be. Maybe just milk.

Check here for a alternate recipe w/o sour cream. You can still add mixed veggies if you like.
