Hi menu pals!!! How is everyone? It is extremely windy here and has been for the last 3 days. But I live in a wind tunnel, so I guess it's normal, but I don't have to like it!!
Today is very busy as I'm catering an event (my first!), so I've lots to do!! DH and eldest DS drove to New Mexico to get his car and bring it back here, so I don't have to cook for the rest of us.
So here's my menu for the week - share yours!!!
Saturday - here's what I'm making for the banquet (it's only for 20 people) - Focaccia with Grilled Onions, Tomatoes and Rosemary; Tomato Basil Parmesan Soup with Grilled Cheese Croutons, Black Raspberry Glazed Chicken With Wild Rice Stuffing, Roasted Asparagus Bundles, and French Napoleons
Sunday - Easy Lasagna Rolls with salad and bread
Monday - Hoisin Garlic Burgers with potatoes and cole slaw
Tuesday - Creole with green beans
Wednesday - Ravioli With Balsamic Brown Butter, salad and bread
Thursday - Garlic Pesto Chicken over penne
Friday - chili I didn't make from last week

Hi Everyone!
Been warm, sunny, and gorgeous here, but a few cool days (60's) which is fine - nice change from 80 during the winter.
Still trying to save money, eat 1 salad every week as a main dish; use everything and NO waste. Really just trying to eat healthy and save up as all. I still have tons of greens, bibb, red leaf, arugula and kale; tomatoes, peppers, and onions in the garden. So that is on the menu.

Ham and bean soup (a mix of 2-3 recipes); deviled eggs; home made bread; and a relish tray (carrots, celery, Pub cheese, crackers, salami, marinated mushrooms, pickles). It is a tradition from growing up. Sat night after skiing all day at our cottage - in honor of Mom's 'Soup Night."

Lady #4: 3 meals to be delivered Mon am
- Cube steak w/mushroom onion gravy; mashed potatoes with celery root and parsnips; roasted beets over greens
- Chicken Egg Fu Yung, http://www.food.com/recipe/egg-fu-young-peony-flower-eggs-367412 a nice starting point, over rice; wonton soup recipe from another site
- Pork stew (my version of - http://www.williams-sonoma.com/recipe/pork-and-pumpkin-stew.html; pumpernickel rolls; fresh fruit
Me: Cube steak w/gravy (simply pan seared, added onions, garlic, and beef broth); http://www.food.com/recipe/cabbage-and-noodles-48588; sliced tomato

Lady #1 and Lady #2: Fried catfish (my own version); based on http://soul.food.com/recipe/best-ever-collard-greens-13994, but needed more seasoning, hot sauce, etc; but a good start; http://cheese.food.com/recipe/shrimp-and-cheese-grits-279577; tomato salad
Me: Leftovers - Soup from Sat; fresh fruit or maybe a sandwich

Out with 2 friends, Happy Hour type of food at our seafood restaurant

Lady #1: Cedar plank salmon; wild/white rice; roasted green beans
Lady #2: Seared lemony scallops (just a lemon seasoning), topped with a white wine and tarragon butter; served over wilted spinach, w/bacon and onions; parsley potatoes
Me: Grilled sausages (from a local meat market); a mix of peppers and onions over cheesy polenta (mix of smoky gouda, parm, cream, & broth)

THURS ...
Lady #3: I'm thinking Veal - TBD
Me: Corned beef hash (freezer stash) with a fried egg; grilled peaches
(Recipe TBD)

FRI ...
Ladies #1 and #2: Card/Game Night - TBD
Me: Fried catfish; tomato mozz salad; black eyed peas - in the works

Breakfast: yogurt, fresh fruit, poached egg, or cottage cheese
Lunch: if any ... soup or leftovers
And ... don't forget to clean out your fridge, freezer, and pantry ... there is a meal waiting to be made.

Good morning! The weather her has been cold but at least no snow!
Saturday: Kelly's Midwest " Cold Remedy" Pot Roast
Sunday: Grilled Honey Garlic Pork Chops with rice and veggie
Monday: Hamburgers
Tuesday: Roast Turkey with sausage stuffing and mashed potatoes
Wednesday: pasta night
Thursday: Korean Roast Chicken Thighs with rice and veggie
Friday: leftovers

Shari, like the chicken thighs. Easy but lots of flavor.I think they might be good on the grill as well; perfect for me.
Stay warm, the midwest; northern tier is really getting hit this week with SUB ZERO weather.

Mickey, can you come and make that for my birthday? Or better yet, maybe I should come to you where it's warm. I've had enough winter already.
Charmie, what are grilled cheese croutons ... like little grilled cheese sandwich cubes, or more like a crouton with cheese on it? Sounds interesting.
Here is my very low-key plan.
Sat – friend’s bday; bringing an app; the smitten kitchen artichoke olive crostini since it’s so easy (I use a bunch of roasted garlic rather than fresh)
Sun – Baja Black Beans, Corn and Rice (except I have various other cooked leftover grains to use up); I add tomato, greens, avocado, olives, green chilies, and who knows what else
Mon – broccoli casserole from neighbor, frozen other veg
Tue – Seared Salmon With Balsamic Glaze, brown rice, Brussels sprouts
Wed – leftovers from Tue
Thu – Peanut Butter Chicken with Chile, leftover brown rice, zucchini
Fri – Crispy Salmon Cakes With Lemon- Caper Mayonnaise, pseudo roast potatoes, veg
