    Leftover Creamy Vegetable Corned Beef and Cabbage Soup

    These are leftover veggies from my CBC (Corned Beef and Cabbage)
    It is the most amazing easy soup.

    I used approx 2 wedges of cabbage, 2 whole spuds, 1 medium carrot if that, 1 1/2 onions and pureed with veggie broth until a thick hummus like consistency. It was about 2 1/2 - 3 cups of veggies, mixed.

    Bring the veggies to medium heat in a pot. Then, add 1/2 cup dry white wine, and 1/3 cup half and half. Puree again. Season with s/p, dried parsley and puree until smooth. I used my immersion blender.

    Add extra broth until you get the consistency you like. Thick or thin, there is no right or wrong. Lots of pepper for me to finish it off.

    I froze mine, but just heat and sere. With the low amount of cream, this does freeze well.

    Serve with a spoon of diced leftover corned beef as a garnish for an excellent easy soup! Or simply a swiss cheese topped crostini.

    Ok now didn’t I just see this one?

    Looks and sounds very tasty and am sure the left over veggies from the Corned beef would bring a ton of flavor.

    Good grief, I also never saw this one!! Until now!

    Thx Zurie. Just leftovers, but I make this every year after CBC. It's easy and really delicious. The little bit of cream and wine gives it a great flavor. And with basically all veggies, it is pretty healthy too.

    And, I like mine pretty thick, but you can always thin it out a bit more if you like. And, if you use a blender, vs the immersion blender; you can get it a bit smoother. But, I like a little texture. I had a small cup; and still have 3 containers in the freezer

    I have no clue. I know I went back in to 2 of the posts to edit (just a typo or an ingredient) and it seemed to created a separate post. The third one I think I just may of done it twice by mistake. My computer was so slow and timed out; I didn't think it posted. But the other 2 I know I edited and I didn't see the edit tag line either.

    No idea.
