    Hi, could you tell me what sort of mustard seeds to use in your recipe please?

    Are they brown, black or yellow ones?

    Madras curry is usually yellowish, so I'd stick with yellow or brown.

    Thanks for your advice, I was guessing it was probably yellow from looking at other curry powder recipies, but sometimes black mustard seeds are fried at the start of vegetable curries such as bombay aloo, so I wasn't sure.
