    Hello everyone,

    I hope this post finds everyone well. I've returned to ask a good, easy, authentic recipe for ratatouille. I realize I can search the website, but I figured personal experience with a recipe would be better.

    Ratatouille With Chickpeas -- Crock-Pot is a great recipe for Ratatouille that is made in the crockpot, and in a shift from the normal ratatouille recipe, contains chickpeas - which I really enjoy. Keep in mind that if you don't have a crockpot, you can easily convert it to stovetop.

    I've got another recipe I'm uploading right now.

    Hello again,

    Ratatouille (Moosewood Cookbook) is another favourite of mine. It a more traditional Ratatouille recipe.

    I reached out to my Mom, too - I've been putting her recipes up here to save them for the family - and until you asked, we both forgot about this recipe. Hopefully, she'll email me this recipe tomorrow so I can post it as well.

    Either way, here are a couple to get you started!

    Thanks so much for the assist Katzen. Since I've not had ratatouille before, I think I am leaning toward the Moosewood recipe.

    A secondary question - since the dish is made with tomato sauce, I am guessing the result will be red. Is there a good green colored dish to go with it? It's for a holiday party and the colors would be a propos. I was thinking seafood and pasta with pesto.
