    Easy Fish Sandwich

Egg dipped fresh trout and dredged in: bread crumbs, parmesan, red pepper flakes, and fresh parsley. Pan sauteed (this was actually left over from the over night)
This was warmed up and topped with sharp cheddar cheese; lettuce, tomato, a thin sliced onion, and home made tarter sauce. Served on a sesame roll. Basic, but really good.

I planned fries; but, I had salami, home made Pub Cheese and crackers during the game today (also the remaining salmon spread) with a friend, so wasn't very hungry. This was it for dinner with a cold beverage. I figured I consumed enough calories already.

Nothing fancy, but tasty. After all the cheese and crackers I ate earlier, this was just right for dinner.

Thx, the tomato and lettuce came from my garden as well.

I do admit, fish sandwiches are one of my favorites; and having fish so much down here in FL, it is a nice way to incorporate fish in your diet with just not having it plain. Normally, I just grill it; but this time I used a piece of leftover fish than I pan fried. But having it fresh is even better.

One of my favorite sandwiches is my blackened fish sandwich with a lime cilantro slaw; topped with avocado and onion. It is actually on my catering menu. I love to make that.
