    What to do with leftover orange bbq pulled pork?

    I made a recipe for orange bbq pulled pork and have a TON of left overs. It's just my husband and I in the house, so even though we've been eating left overs for days, there's still a ton left and I'm not sure what to do with it.

    I know I can freeze it, but I was hoping to reinvent it into something else. I just don't know what! icon_sad.gif The addition of orange in the recipe, though delicious, is making it difficult. Ideas?

    Make sandwiches with it, wrap well in plastic wrap and freeze. Reheat them from frozen in the microwave for about a minute. In a couple of weeks it will be nice to have a fast quick lunch. i also have a lot of pork left over when I make my pulled pork recipe, and this is what I do.

    I would also use with tortillas. A salsa would go well with the orange flavor, I think.

    First, don't lose the food just because you would prefer not to freeze it. When thawed it can still serve the same purposes as it could fresh.

    My venturous side tells me I would turn this into something somewhat oriental. I would add a can of pineapple chunks and some sliced carrots to the meat. Make a sauce using the pineapple juice (add about 3 teaspoons of corn starch to the juices plus a bit of ginger, heat till thickened). Add about 1 tablespoon of either soy or teriyaki sauce. Serve over rice.... your favorite cucumber salad for a side.

    You could even add snow peas, and/or water chestnuts to the mix. Nothing in all this is going to conflict with the orange sauce.
