    Last night we enjoyed some really good quality local tamale, Black-Eyed Pea Salsa (Cowboy Caviar) and Tasty Frozen Collard Greens.

    But as tasty as our New Year’s meal was the first breakfast of 2013 breakfast of Tamale Hash was even better.

    While Tamale Hash does not look like much but let me tell you DH and I both all but licked our plates. yummy.gif

    You are a real kitchen whiz!! To do recipes on the 31st can be difficult -- we had visitors who insisted on sharing a bottle of wine with us -- right at the time when I should have been cooking (they were unexpected). So our Old Year's Eve "dinner" was a hastily thrown together thing ...

    And you did recipes! Those photos look fantastic. Love the wording on your 1st photo -- that will make sure no-one steals your photo! icon_lol.gif icon_lol.gif icon_lol.gif

    We are great veggie lovers, and I wonder what "collard greens" are! It looks delicious, much like spinach.

    The egg dish also looks just great -- just the right thing for New Year!

    Zurie last night’s meal was really pretty quick to put together, but was planned to bring us good luck icon_lol.gif icon_lol.gif icon_lol.gif

    Collard greens are a staple vegetable of Southern U.S. cuisine, but are readily available year round throughout the U.S. They can be bitter and tuff if not correctly prepared.

    Typical collards are cooked long and slow with smoked ham hocks or smoked turkey drumsticks, seasoning with onion, vinegar and crushed red pepper.

    Traditionally, collards are eaten on New Year's Day, along with black-eyed peas and cornbread or in the southwest tamales, to ensure wealth in the coming year, as the leaves resemble folding money. fingers crossed and hoping icon_lol.gif icon_lol.gif icon_lol.gif
