DH and I did not wanted just plain Cottage Cheese Pancakes for 1 (I doubled) and I had been dragging my heals about making Walnut Baked Apples (cut down to sever just us) a tag from I Recommend Tag game. So I decided to bring the two together for what turned out to be a delightful holiday flavored breakfast.
