    Anginetti (Italian Lemon Drop Cookies) the recipe is calling for 1/4 cup of shortening can i substue with butter and how much ?

    If you want/need to, yes you can sub butter for the shortening.
    Keep in mind that butter is not 100% fat, it also contains some water and has a lower melting point than shortening. The lower melting point has been known to cause "spread" in some cookie recipes, which results in a flatter, crisper cookie.
    Shortening is 100% fat and has a higher melting temp than butter, which helps cookies to retain their shape (less spread) during baking.

    You would use the same amount of butter.
