    CALLING FUDGE MAKERS....HELP!

    I make the old fashioned boiled sugar fudge, as my grandmother did, without any marshmallow fluff/creme. I make hundreds of pounds of this fudge for Christmas and have an emergency question from experienced fudge/candy makers who have done this.

    I always used to beat with a wooden spoon until matte. The nerve damage in my hands simply will not allow me to do this any longer. Can I do the beating in my stand mixer with the paddle attachment? Tell me everything that you know about it please! icon_biggrin.gif

    You can use a mixer: very slowly and watch carefully... it will "turn" more quickly than using a wooden spoon ..

    Thanks so much! I figured that it could turn more quickly especially as it is going into a room temp. mixer bowl. I saw one recipe that said to mix on high speed for 10 minutes! icon_eek.gif That isn't how my recipes work.
