I have a friend who is canning her bacon by wrapping it in parchment paper and canning it in a pressure canner. I think she is doing it for 90 minutes since that is what I see online.
However, it seems to be unreliable sources when I see the tutorials online. Theoretically though I don't see why you couldn't can bacon... It IS very oily so I would want to follow a recipe for seafood where they say you can can with oil.
Any thoughts? I'm pretty conservative with canning... so at this point I plan on freezing my batch.

I think you're wise to be cautious about things on the internet, Tweaker. I see a lot of untested recipes/methods and unsafe canning practices being touted.
FYI, there are no guidelines for canning bacon from the testing agencies. Freezing is the better option.

if you really want it, I'll scrounge it up, but I did write directly to our Denver Extension Service and kept the email frm Summer. They said it is NOT SAFE and even if someone else does it and is 'okay,' it won't necessarily be for you. IF I COULD, I would've done it.. Spam too

Good to know. I haven't decided whether to confront my friend or not. Maybe I will gently remind her about using testing recipes. I hate always being the "debbie downer" with my preserving friends.

It's doubtful if you'll be able to change her mind, Tweaker.
What you'll probably get is "I've been doing it this way for a long time and I've never gotten sick yet!" or "but LOADS of people on the internet are doing it and they're fine." and that's probably true, but the key word is "yet".

If I were in your shoes, I'd be very wary of consuming any of her product.

In most cases yes, the recipes are safe. I looked at both those books, the first one made my wish list too!

Oh, hey, that first one is on my library list!
We've agreed that NO MORE books are coming into the house before being previewed from the library - and that goes double for cookbooks and knitting books.

I'm doing that with sewing books... not sure if I thought to check if these were available at my library. I think I ran into them on an Amazon suggestion list. (guess their marketing works!)
