    Don't forget about poaching salmon. Now these sauces worked on baked salmon too; but excellent over poached.

    It is a fantastic way to make salmon without calories, sugar or fat. Then, it can be used in tacos, making a salmon spread, over your favorites greens; or, my favorite served over a bed of greens with a sauce.

    Remember you can poach is just water, in a shallow pan; doesn't have to be completely covered, but close to it. Peppercorns, a little salt, and fresh herbs are great in the liquid. So is a lemon, just cut in quarters, squeezed in the water and added right to it. An small onion is also good, just cut in quarters. Add the salmon to a pot of a light boiling water. Turn to simmer and let it go about 5 minutes as all.

    Now, hundreds of sauces
    - a simple heavy cream reduced, added mustard, and dill
    - a cucumber sauce made with yogurt, almost like tzatziki
    - a simple butter, lemon caper sauce is fantastic
    - a fresh fruit salsa is delicious (mango, papaya, avocado, tomato, onions, any mix of your favorites)
    - a tarragon sauce is pretty good as well, which also has cream, lemon, fresh herbs
    - One of my favorite sauces for poached salmon.
    1/4 cup sour cream or yogurt
    1/4 cup mayo
    1/4 cup fresh dill
    1 scallion
    1/2 T horseradish
    1 teaspoon dijon
    splash of cider vinegar

    pour just plain balsamic vinegar over the top and bake.

    my ds loves brown sugar and pecans on top (he can count the carbs and take insulin/pills to 'cover' these)

    Salmon! yummy.gif I love salmon and in looking through my reviews I have made over 101 recipes with salmon. Some of them do call for canned salmon and some of the recipes are pretty much complete meals.
