    Iced Eggnog Cookies

    Is something missing from this recipe because these did not turn out well for me.

    Here's the original she took from Taste of Home, looks like she transcribed it correctly.


    1-1/3 cups butter, softened
    1 cup packed brown sugar
    4 egg yolks
    2 tablespoons eggnog
    1/2 teaspoon rum extract
    3 cups all-purpose flour

    4-1/2 cups confectioners' sugar
    3/4 cup butter, softened
    1-1/2 teaspoons rum extract
    1/2 teaspoon ground nutmeg
    1/4 teaspoon ground cinnamon
    2 to 3 tablespoons eggnog
    Additional ground nutmeg


    In a large bowl, cream butter and brown sugar until light and fluffy. Beat in egg yolks, eggnog and extract. Gradually beat in flour. Refrigerate, covered, for at least 2 hours.
    Shape into 1-in. balls; place 2 in. apart on ungreased baking sheets. Bake at 325° for 13-16 minutes or until bottoms are brown. Remove to wire racks to cool completely.
    In a large bowl, beat the first five frosting ingredients until blended; beat in enough eggnog to reach desired consistency. Spread over cookies; sprinkle with additional nutmeg. Let stand until set. Store in airtight containers. Yield: 4 dozen.

    Editor's Note: This recipe was tested with commercially prepared eggnog.

    The frosting came out wonderful but the cookies weren't good.

    I didn't pack my brown sugar, the "pack" part was left out of the posted recipe, maybe that's the trouble

    Yep, I bet that contributed to it. Brown sugar is always measured packed, unless the recipe specifies otherwise.

    I made a few batches of the following using just some store bought pumpkin eggnog. We all agreed how terrific they were!

    I sprinkled nutmeg on top befoe baking:

    Eggnog Cookies

    •2 1/2 cups flour, all purpose
    • 1 teaspoon baking powder
    • 1/2 teaspoon ground cinnamon
    •1/2 teaspoon ground nutmeg
    • 1 1/4 cups granulated sugar
    •3/4 cup butter, room temperature
    • 1/2 cup purchased eggnog
    •1 1/2 teaspoons vanilla extract
    •2 large egg yolks
    •2 teaspoons ground nutmeg

    Preheat oven to 300°. In a bowl combine flour, baking powder, cinnamon and nutmeg. Blend well with a whisk and set aside. In a large mixing bowl cream sugar and butter with an electric hand-held mixer. Add eggnog, vanilla and egg yolks; beat at medium speed until smooth. Add the flour mixture and beat at low speed just until dry ingredients are moistened. Drop by rounded teaspoons onto ungreased baking sheets, about 2 inches apart. Sprinkle lightly with nutmeg. Bake for 20 to 25 minutes, or until bottoms are lightly browned. Remove to a flat surface with a spatula.
    Makes about 3 dozen.

    OMG! That recipe is AMAZING!!

    I used the icing from the first recipe to frost them, they were little bites of eggnog heaven, THANK YOU!!
