Hi,
We ended up with one dinner's worth of Thanksgiving leftovers so I had a menu night to spare from last week. Leftovers are so nice!
Sat – little time to cook; leftovers from Friday ( Pumpkin Posole)
Sun – having 6 friends over whom we haven't seen in a while: Chicken Marbella (very easy and prep is ahead of time) w/egg noodles and broccoli; others bringing salad, wine, dessert
Mon – black bean quesadillas (made up, with onion and green pepper and maybe spinach)
Tue – Stir fried Garlic Beef with Broccoli with brown rice
Wed – Red Pepper Risotto starting w/leftover rice; with salmon and broccoli
Thu – Chicken Paillards With Artichokes & Dijon Sauce with Brussels sprouts and over millet
Fri – going to UVA glee club Christmas concert; made up white bean soup with a small amount of smoky meat and greens, with bread
