    Hi 2CG,

    Good luck with the return to work. I had a similar adjustment just recently, restarting work after being home with a new baby, but I have been sticking to just 20 hrs/week still until mid-Dec, when unfortunately I will have to go to 32 hrs/week in order to still get health benefits. The freezer is definitely your friend! That and making something early in the week that you van have leftovers from later in the week, either the same meal or transformed into something else, with minimal prep of course!

    For the spanakopita, I have frequently done peas, maybe with some sauteed onions. I like this because the peas have protein which is otherwise a bit low in the meal unless you do something like add tuna or egg to a salad.

    Wednesday: Refried Bean Chili, tortilla chips and a green salad.

    Thursday: Re-trying a dump chicken recipe using cranberry sauce, BBQ sauce, onions and chicken which you serve over rice. If the family likes it we will make up a couple dinners worth this weekend to put in the freezer.

    Friday: As usual, take 'n' bake.

    Saturday: Still working the weekend job, so I'll be busy 6 out of 7 from this point on!

    Sunday: Going to try and feed the freezer with meatballs, gravy, taco meat, green chili chicken, maybe cranberry-BBQ chicken, grilled chicken chopped and sliced.

    I did that 4 years ago. Returned to the workforce after 17 years! Really changed my menus/cooking. I yearn sometimes for the time to fix lengthy meals, but they have to wait for the busy weekends.

    Thursday: BB Tourny, Mushroom Turkey Burgers, dill pickle spears, salad

    Friday: BB Tourny, Eat Out, then cocktail time for adults--Mexican Madras

    Work Lunches: Tortellini Soup w/ French Bread (Bread Machine) and Sausage Onion Squares

    Breakfast: Open Face Monte Cristo Sandwiches

    Snacks: Orange Blossom Muffins
