    Why does this recipe call for 8 - 8oz. bowls for the actual cookie? Can they be made as a 'ball' cookie on parchment / cookie sheet?

    From looking at the ratio of dry to wet ingredients, I think this is more of a batter. I doubt that it would hold its shape as a drop cookie. You could try increasing the flour, but that would change the texture.

    No, they can't!
    The cookie "mixture" is a batter, much like a cake batter in consistency.....it will not hold its shape on a cookie sheet (parchment lined or not).

    The reason for using oven safe bowls is so that the cookie will bake in the shape of half a sphere (the rounded shape of the bowl), so that when you sandwich the two halves together you end up with a ball shaped cookie.
