    Smoked Venison Roast

    I am interested in using this recipe this weekend. I have a barrel smoker and will be smoking a brisket and ribs at the same time as the roast. I have never used a water pan since it is side heat source. Will it be ok not to use the wine?

    I wouldn't even bother with the 1/2 c wine in the drip pan - that's just a waste.

    Thanks for the quick response Doc. Do you recommend using the wine in the Dutch Oven (or large stock pot)?

    I would definitely add the wine to the pot; it will add a lot of flavor.
