substitution for sherry vinegar?

I have looked in every store in my area and nobody seems to have sherry vinegar. What would be the best thing to sub for in in a recipe where the vinegar is a major component? I seem to have every other type of vinegar known to humankind in my pantry, so even if mixing a couple different types would provide a good sub, I should be able to do that.

A white wine or champagne vinegar will probably come closest, maybe with a small amount of good balsamic (maybe 3:1 or 4:1).

This is one suggestion but if it's a major component, I think it would be inadequate - it won't have the same nuance of flavors.

You can make vinegar from wine, but I am not sure how this works with sherry, which is a fortified wine http://www.wine-tastings-guide.com/how-to-make-wine-vinegar.html . I could not find anything specific to sherry vinegar.

I love good Spanish sherry vinegar, there really is no way substituting something else will give you the right flavor. I agree that a high-quality white wine vinegar could be substituted, but it's not the same, and I would not incorporate any balsamic into the mix. I order excellent sherry vinegars online from La Tienda. The sherry vinegar I am able to find in groceries here is not very good.

What are you making? I'm always looking for recipes that use sherry vinegar. When fresh figs are in season, we love to make Fresh Figs Marinated in Sherry With Aged Goat Cheese and Basil, which has some sherry vinegar mixed in the marinade.

The recipe didn't actually specify sherry vinegar, it just said vinegar, but since it is Portuguese I assumed that would be a good choice. I looked in the database and it's basically Portuguese Vinegar Marinade or Sauce (Molho Escabeche) for Fish, which calls for either cider or red wine vinegar. So I guess I will use one of those... I just thought it would be a fun excuse to buy a new "fancy" ingredient! Thanks for the advice, everyone

That's interesting, I have a recipe posted for Korean fried fish, which also has a vinegar sauce. Going to try yours soon!
