I'm giving my son and DIL a 4 qt CrockPot for Christmas. She's not much of a cook (yet) so I thought I'd also put together some meals and freeze them so all she has to do is thaw and dump them in the crockpot. What recipes have you had the best luck with freezing ahead of time? Thanks!

I don't usually do this, but I imagine stews would be a sure bet. Do they like soups - that would be another possibility.
Some things don't freeze well, like potatoes and bell peppers. What you might want to do is put the instructions for cooking and the remaining ingredients needed into a small ziploc bag - like sandwich sized - and tape it to the main bag with freezer tape.
You could also put together a slow cooker cookbook here on this site and make sure she knew how to get to it, choosing recipes that are straightforward and which use ingredients you know they would like.

I'm afraid I don't know recipes that freeze before cooking; however, the cookbook below on Food.com lists recipes that freeze well after cooking.
