    need help.....What would YOU do??

    Um....so I've got a big crowd coming for Thanksgiving. About 40 people. Been doing loads of prep work all week, and now I'm getting down to crunch time, like the rest of you. But I have a little problem. 2 of the 40 guests are vegetarian; not vegan though. I had told them I was making a winter squash soup and that I would make some of it vegetarian, using vegetable stock instead of chicken stock for the first course. And I had every intention of doing that! But I got up at 6:00a.m. this morning to start preparing the vegetables for the roasting part and without thinking, added all chicken stock to the bottom of all three baking pans that held the acorn squash, butternut squash, carrots and onions. Covered them with foil and into the oven they went to cook for 2 hours. it was only after about an hour, that I realized...."Uh-Oh!!!" There's nothing I can do about it now. I still plan to use vegetable stock to the vegetables when I puree them for the small vegetarian portion. And I won't use the bit of chicken stock that's in the bottom of that baking pan that the squash was steamed in. I'll be lifting them up out of the bit of stock on the bottom, and taking the pulp out of the skins. But technically, the carrots and onions and squash were all sitting in it while roasting. I don't have another couple hours to make more, nor am I going to the store to buy more vegetables to start over.
    Phew! Ok, long explanation. My question is this. since it was an accident, and I'll minimize the effects of being in chicken stock, by straining the veggies, but do you think I HAVE to tell the 2 vegetarian girls that I accidentally cooked their veggies in chicken stock before adding the vegetable stock for the soup? I'm wrestling with this. One of the guests I think would be upset, the other (who has switched back and forth from vegetarianism I think won't get upset. She'll be ok with it. I don't want anyone upset. How important is it to inform them of my oversight?

    What a pain! I have to say, if it were me, I would start fresh and make a small portion of this for the veggie guests. If it was just the one person who switches, I'd call and ask, but if you have someone for whom this is a religious or philosophical issue, I'd just give in. That being said, I would take a short cut. Precook the veggies in the microwave and do a shorter roast or do it in the skillet - create a little caramelization and then go on with the recipe. There is only so much time to get everyone done.

    Thank you. But I didn't have anymore of the veggies to cook, nor did I have a car today to go back to the store. I went ahead and strained the veggies very well (it wasn't like they were submerged) and went ahead making a small portion like a 3 cups with the vegetable stock and put in the blender, adding the spices. I might go ahead and tell their mom (who's not a vegetarian, but accommodates their desires to eat vegetarian) and let her decide. And I'll just leave it up to her whether to inform them or not.

    To be honest, while my own family doesn't eat meat on fridays throughout the year for religious reasons, I've always told my kids that if they were at someone's home, who didn't know, and served them meat, it was more important not to make them feel bad, and just eat what they prepared and be gracious about it. Charity comes first.

    I'm hoping my sister's girls feel that way too. I did really try!

    My younger niece was a vegetarian for a while, but while vising relatives in the former Soviet Union, ate whatever was served, understanding that a vegetarian diet would have been nearly impossible for them to meet at that time.. I think you've done the best you can under the circumstances, and they will just have to make their own minds up.

    I would tell her. Rinse the veggies u plan to use. Do u have a can of pumpkin maybe use that. I bake my squash whole no need for stock at that point. Also roasting the veggies with a touch of olive oil would have brought out the sweetness so maybe try that next time.
    After all it is Thanksgiving and maybe she`ll be thankful you tried for her and will understand.
    Wishing you a wonderful Thanksgiving! I hope that is the worst of your feast! Feeding such a large crowd things are bound to happen.

    Thanks. Yes, Hopefully that's the only thing that went awry! I'm just going to tell my sister and leave it up to her whether to tell her girls or not. I've stressed about it enough, and did my best.
