That deer ham looks simply amazing. Wow, I'd love to have a taste of that!
Our smallish Cameron smoker has rusted due to neglect, even though it was covered in plastic ... Here on the sea everything rusts -- honestly, it is the worst thing about living on the sea.
Can one smoke meat and poultry successfully in a Weber?
Thanks for the comments!
I know several folks around here that use a Weber for smoking. It is basically cooking indirect with a small packet of wood chips on the charcoals. Put all the hot coals on one side of the grill and the meat on the opposite side. Place a foil packet of chips next to the hot coals and you can get a pretty good smoke flavor that way. I use a metal box made for that purpose in my gas grill when I want a bit of smokey taste on food.
