    Looking for menu ideas to accompany smoked salmon

    We caught some beautiful coho salmon on a trip to Alaska with my SIL & BIL who live out of state. We had it shipped back to our house and next Sunday we will be serving it to them.

    Whenever DH & I eat salmon, we always keep it simple with just wild rice as an accompaniment. However, since we are having company, I like some ideas on what to serve with it.

    I think this may work. Since it's fall and squash is o'plenty
    So pretty & so yummy.

    That looks very interesting ... and lots of rave reviews. We love butternut squash but have always just microwaved it.

    Now need something green to go with it. Perhaps steamed broccoli?

    Salmon and Spinach Pesto Pasta


    personally, I'm thrilled with it on a toasted bagel, sliced red onions, capers and cream chese . of course, muenster cheese too icon_smile.gif

    The salmon smoked is very rich, but I do love it. I make it quite often.
    The butternut recipe sounds very good.

    I usually serve wild rice with mine as well; but, I often change it up by adding some toasted walnuts, and maybe some dried cherries or cranberries.

    One time I served a white bean bruschetta topped with an olive tapenade; and I also did the same with a butternut squash bruschetta topped with goat cheese.

    Since the fish is rich; a nice mixed baby or organic greens would be really nice. A cranberry or some type of citrus vinaigrette, maybe an apple vinaigrette would be a nice salad. Some apple slices, dried fruit, onion etc.

    If you want just a veggie; you could go lighter with roasted cherry tomatoes or roasted cauliflower.

    Sauteed kale is also really good

    I also make a creamy artichoke casserole which is very good; not as rich as it seems, but tasty and it goes really well with fish.

    I just made a salad from a food blog last night that I think would fit the bill! You can omit the chicken (I did) to make it a side for the salmon. I'm seriously obsessed with this salad.

    I see (no I am not stalking you) icon_wink.gif you made & reviewed squash dish. Did you serve it with the salmon?

    Yes, I did. My DH doesn't like fruit and nuts in vegetables and salads but he did like this (although I didn't use the nuts ... I thought I had some on hand but couldn't find them). I took the leftovers in my lunch. I will be making this again.

    This salad looks wondeful. Like I said in my previous post, DH doesn't like fruit & nuts in salads, but I do. I'm going to try this for my work lunches.

    I think I have made it w/ and w/o the nuts. Either works. I'm glad you enjoyed it.

    This will be on our Thanksgiving menu again this year.
