Canned beef and this is weird.

I did the usual beef and beef stock together, 10 pounds at 90 minutes. The quart jars have been out at least 2 hours and still are bubbling I have never seen this, has anyone else ever have this happen. I am a seasoned canner, but somewhat new to canning beef. Any thoughts? I can actually touch the out side of the jar with out getting burned at all...so why is it still bubbling? Hmmmm?

It's possible it was still continuing to exhaust air, I suppose.
Maybe one of our other canners will have a better answer.

I actually had that happen once, hate to say it but I tossed it. Some ole timer that canned a lot told me to use a glove of garlic in each jar when I can beef, it has never happen since.
Not sure the reason why it does that.

Yeah, it's soo hot and under pressure.
Everything I p. c. does that for hours:
meat, carrots, potatoes, green beans, corn, etc.....

I could swear I read somewhere you 're not supposed to can garlic.. whole like that. ?????????

Been doing it for years and haven't killed anybody yet.
