    Popcorn Is An October Food

    Popcorn is one of the best snack foods other than fruit and vegetables.

    It has more than 40 different nutrients.

    It has more iron than eggs, peanuts or spinach.

    There is vitamin B complex vitamins, Vitamin E, Riboflavin and Thiamine in popcorn kernels.

    It has the most protein in the cereal grain.

    The hull of the kernel has iron, phosphorous, and protein.

    It has more fiber than potato chips or pretzels.

    The American Dental Association suggests that popcorn is a good sugar-free and fat-free snack for children. The National Cancer Institute recommends popcorn as a great way to add fiber to the diet. The American Diabetes Association allows popcorn as a starchy snack on weight-control diets. Even the Feingold Diet for hyper-active children lets popcorn be on their diet because there are no additives and no sugars.

    When we put butter and salt on the popcorn, it does change. We add calories and sodium which makes it
    less healthy for us.

    One thing we can do to add some flavor to popcorn, is put a seasoning mix on it.

    I have become nervous about using microwave popcorn bags, and never liked the air-popped - it tastes like cardboard to me. So a while ago I bought one of these -

    honestly, it works just as fast as a microwave, and just requires a little stirring. I use coconut oil or ghee in it (it says not to use butter, but ghee has the milk solids removed and I have had no trouble using it). Coconut oil makes it taste a bit more like movie popcorn. And of course I can control the salt, or add other seasonings, as you've outlined above, Laury.

    I just love this little gadget.
