    Coconut Chicken

    When I first joined The Caribbean forum, I bought coconut milk.
    I just found a great recipe to try it out from twissis;
    she posted this recipe in 2009.
    Chicken in Coconut Milk (Martinique, Caribbean
    from The Essential Caribbean Cookbook.


    I hope she isn’t too insulted that I made a few changes,
    but it turned out fantastic.
    I made it in my electric fry pan, used
    boneless skinless chicken breast that I cut in cubes.
    I Lately I am trying to use my healthy coconut oil
    as much as I can so I used this to brown the chicken.
    With the onions I sautéed mushrooms and
    added a few red pepper chunks to add color.
    Since I had no chili pepper I added 1/2tsp Harissa (chili paste.)

    Quite a few recipes for chicken satay call for coconut milk as well!
