    This is a great thread. I have saved it to my favorites so I can go back and read some of the recipes and hints.

    One of my ex-co-workers had 3 friends that wanted to learn how to make her individual pot pies. So instead of teaching them separately they got together at one house and made them. Four kinds where made (chicken, beef, pork and hamburger), each woman made 4 dozen of her kind and they all took home 1 dozen of each kind. They gathered around the table and were taught step-by-step, that way they learned and one person wasn't stuck with doing all the work.

    I don't have anyone that I would want to cook with around here, and since we keep to ourselves it would be a hassle trying to do stuff like this. And I know that I cook totally different than everyone around here. As a restaurant and school cook for the past 5 years I know people around here are too scared of spices (herbs), for me to want to eat their cooking. I had a soft taco a few months ago from a fund-raising lunch and it had about 1/2 to 1/3 the seasoning it called for, I ended up opening it up and adding cajun seasoning to try and get some flavor into it.

    But if you can find someone that you can cook with, then great. Just remember that you have to get them to share the expense too.

    In the summer I do alot of make-ahead stuff from my garden. I do lots of casserole making in the summer, mostly toss together and freeze to heat later. Some things are better pre-cooked like the pot pies and lasagnas. This year I will be using a lot more of them too, hubby will be going back to school this year and has a 40 minute commute one way. I will be heading back to work for the school year. I used to depend on him to cook if I was too tired to when I got home.

    Microwave Velveeta Polenta

    Cooking time: 12-minutes total on high (1100-watts)


    4 cups cold water
    1 cup cornmeal
    2 Tbs chicken bullion powder (or 2 cubes)
    1 tsp granulated garlic powder
    1 tsp onion powder
    dash pepper to taste
    1 egg, beaten
    3 Tbs butter or margarine, melted
    1/3 to 1/2 cup Velveeta cheese, cubed

    1. In an 2 qt covered casserole dish, whisk together the water, cornmeal, chicken bullion powder, garlic powder, onion powder and pepper. Mix well.

    2. Now whisk in the beaten egg, mix well.

    3. Whisk in the melted butter, mix well.

    4. Cover and microwave 4-minutes on high.

    5. Whisk well, stir to bottom and mix until polenta is uniform without lumps.

    6. Stir in cubed Velveeta cheese. Mix well.

    7. Cover and microwave 4-minutes more on high.

    8. Whisk well, stir to bottom and mix until polenta is uniform with out lumps.

    9. Cover and microwave a final 4-minutes more on high.

    10. Whisk well, stir to bottom and mix until polenta is uniform with out lumps.

    11. Serve warm.

    Serving suggestion: Serve Hormel Beanless Chili over Polenta
    for a mock Tamale Dish.

    Thanks for the link! I really liked the variety of choices and the fact they had so many 'Zaar recipes. They also had recipes from other OAMC/co-op blogs that I then spent several hours perusing and making lists to try out.

    Bump........Here's another good one! It was started in 2002, with the last post added over 2 years ago. I love "cheap" meals that taste good, and are healthy. There are some good budget saving recipes listed here.

    A great recipe that can be made for a small or large family, just judge the quantities based on your family size.

    Cheesy Chili Macaroni Casserole

    Elbow macaroni noodles
    canned chili beans in sauce
    Shredded Cheddar cheese
    Packet chili seasoning mix
    Canned whole kernel corn
    Hamburger (optional)

    Boil elbow macaroni noodles. In a separate sauce pan ,heat up chili beans and corn. Mix chili seasoning packet with water to create a sauce. Add to beans and corn mixture. Add macaroni noodles and stir thoroughly. Now you can either put it in a glass baking dish and top with cheese, bake until melted or add it while in the pan. If you want to make this with hamburger, just brown the meat and add to the beans and corn mix.

    This is also a good way to use leftover chili. Just add noodles, corn and cheese!
