I am trying to start using the things I am going to store and really don't have any recipes for my Dent Corn other than grinding it and making Cornbread. Now I love Cornbread but you can only eat it so often. If anyone could share their favorite Dent Corn recipe I would appreciate it.

Basically just a variety of corn that isn't as sweet as the kind you would eat for dinner that is dried. It is made into cornmeal. I am looking for some different uses.

I did a google search and this link has a recipe book....

Other sites I ran across suggested using this type of corn for tamales and tortillas. Hope this helps! icon_smile.gif

I have to confess...I've never heard of it either. Is it something you grew, or purchased?

I too have dent corn in my storage. I also grind it for cornmeal. I use the corn meal for cornbread, place it under french bread to cook, under pizza to cook and for polenta. I am going to experiment with corn pudding and mush. I'm interested to get some other ideas also.

I purchased it from the local Amish market. It is really just a variety of corn that is dried, it looks sort of like popcorn but it's not smooth and is dented on both sides hence the name dent corn.

I made Indian Pudding this weekend and it was a hit. I have made Polenta but never for the kids so I will try it and see how it goes.

Here is a recipe that you might want to try with your dent corn:

"Dinner Grains" and "Old Fashioned Parched Corn" both look like they call for dent corn. I know some of the folks at Johnny's Select Seeds eat parched dent corn as a snack while working in the fields.

If dent corn is just plain field corn, you can use it any way you want. I grew up eating field corn and never knew there was any other kind. I still do not like the extra sweet corn at all. As a matter of fact, sweet corn will not work in a lot of Cajun dishes. Hope this helps

How do you store dent corn other then in grinding it up?

I would presume that, if it's already dried, in air-tight packaging to deter moisture. Or did you mean "use"?
